Creamy Pumpkin And Potato Gratin

  • INGREDIENTS:

    3 tbsp (45 mL) Unsalted Butter, softened
    4 sprigs Fresh Thyme
    2 cups (500 mL) 35% whipping cream
    2 tsp (10 mL) minced garlic
    1 tsp (5 mL) salt
    1/4 tsp (1 mL) freshly ground black pepper
    1 sugar or pie pumpkin (1 kg), quartered, seeded, peeled and cut in 1/2-inch (1 cm) thick slices (5 cups/1.25 L sliced)
    2 lb (1 kg) russet (baking) potatoes, peeled and set in bowl of cold water
    2 cups (500 mL) shredded Gruyère cheese

  • DIRECTIONS:

    Preheat oven to 400°F (200°C). Brush bottom and sides of 13 X 9-inch (3 L) glass baking dish with butter.

    In small saucepan, heat thyme, cream, garlic, salt and pepper over medium heat just until mixture comes to a boil. Remove from heat. Let stand for 10 to 15 minutes.
