Chocolate-Dipped Iced Coffee Popsicles by Chocolate-Dipped Iced Coffee Popsicles For popsicles: 3 cups brewed coffee 1/2 cup half and half, or coconut creamer 1/2 cup sugar shredded coconut {optional} For chocolate sauce: 1 cup semi-sweet chocolate chips 1 Tbl coconut oilTo make popsicles: Brew coffee, add half and half and sugar. Stir until sugar is dissolved. Pour into popsicle molds and chill until just cold. Put in freezer for 6-8 hours. Dip in chocolate sauce and roll in shredded coconut and put back in the freezer to set, about 30 minutes. To make chocolate sauce: Add chocolate and coconut oil to a bowl and microwave at 20-30 second intervals, mixing in between, until melted and smooth.
