Chocolate Sponge Squares!

  • Preparation time 10 mins
    Cooking time 45-50mins

    150g /6oz /1 cup self-raising flour
    28g / 1oz /1/4 cup unsweetened cocoa powder
    2 tsp baking powder
    175 g / 6 oz /3/4 cup caster sugar
    175 g / 6 oz / 3/4 cup butter or margarine
    3 eggs

  • Preheat the oven to 180c ( 160 fan) gas 4 and grease and line a 30 cm x 23 cm cake tin.

  • Put all of the cake ingredients in a large mixing bowl and whisk them together with an electric whisk for 4 mins or until pale and well whipped.

  • Scape the mixture into the tin and level the top with a spatula.

  • Bake for 30-35mins.The cake is ready when a toothpick inserted in the centre comes out clean.

  • Transfer the cake to a wire rack to cool completely before cutting into 12 squares.
