Chocolate Cherry Marshmallow Cake

  • 1 (18.25 oz) chocolate cake mix (I used Devil’s Food Cake)
    1 cup flour
    3/4 cup sugar
    1/2 tsp. salt
    1 1/3 cup water
    2 Tbsp. oil
    1 tsp. vanilla
    1 cup plain greek yogurt or sour cream
    4 eggs
    4 cups mini marshmallows
    1 (21 oz) can Lucky Leaf cherry pie filling
    powdered sugar for dusting

  • Preheat oven to 325 degrees F.
    Spray the bottom of a 9×13 dish with baking spray.
    Sprinkle marshmallows into pan and set aside.
    Mix together cake mix, flour, sugar and salt.
    Add the water, oil, vanilla, yogurt or sour cream and eggs; mix 2 minutes with electric mixer.
    Pour over marshmallows and smooth out.
    Place spoonfuls of cherry pie filling over batter, about every inch or so apart.
    Bake for 1 hour or until toothpick inserted into cake comes out clean.
    Cool and dust with powdered sugar.
