Chili Ginger Shrimp

  • 1 pound shrimp
    - peeled, deveined
    1 tbsp minced ginger
    1 garlic clove minced
    2 red chili peppers
    2 tbsp chopped green onions
    1 tsp fish sauce
    1 tsp low sodium soy sauce
    1 tsp stevia sweetener
    1/2 tbsp coconut oil

  • Mix all ingredients in a large bowl except the oil, cover and put in refrigerator 15-30 minutes to marinade. Heat oil to medium high and add shrimp to pan. Cook for 2-3 minutes on each side. Serve with brown rice or quinoa.
