Chicken And Chickpea Risotto

In a pan mix up 1chicken stock pot 1veg stock pot and 1garlic flavour pot. Add in 4cups boiling water and stir until dissolved :)
Measure out 1 cup arborio rice (enough for 2 people) and add to your stock mixture :)
Transfer your pan to a high heat and cover until boiling :)
Once boiling stir the mixture so that it doesn't stick to the pan! It will burn!
Drain off your chick peas and spread them on a baking sheet to be roasted on max heat while your rice cooks. I add mixed herbs and garlic to taste but that's optional
Once it's boiling turn to medium heat to simmer for around 15 mins depending on your cooker, stirring regularly
Your rice will begin to thicken and when this happens it's important to keep stirring so it doesn't stick to the pan!
Once your rice looks like this remove from the heat and let it stand while you prepare your chicken
I use ready cooked frozen chicken breast piece but you could use raw or quorn if you'd prefer and just cook these accordingly, I defrost mine for a few mins in the microwave before stirring into my rice
Remove your chickpeas from the oven and stir these into your rice also
And there you have it! Chicken and chickpea risotto :) enjoy!
