    • 2 ounces cream cheese
    • 1 1/2 to 2 1/2 cups powdered sugar
    • a pinch of kosher salt
    • 1 teaspoon peppermint extract
    • about 4 chocolate sandwich cookies, broken into small pieces
    • about 4 ounces Ghirardelli 60% cacao chocolate, melted and cooled slightly
    • chopped peppermint bark, for garnish

    1. Place the cream cheese, 1 1/2 cups powdered sugar, and salt in a large mixing bowl.  Beat on medium speed until combined.  Continue adding powdered sugar, until the mixture forms a ball and has the consistency of a stiff cookie dough.  Stir in the peppermint extract and chocolate cookies.
    2. In the palm of your hand, roll about 2 teaspoons of dough into a ball.  Place on a parchment-lined baking sheet.  Dip the bottom of a drinking glass in powdered sugar, and use it to press the ball flat.  Repeat with the remaining dough.
    3. Dip the patties in melted chocolate, and allow to set on a parchment-lined baking sheet.  Garnish with chopped peppermint bark.
