1 to 2 tablespoon ofbutter
Splash of half and half
2 flour tortillas
2 slices of American cheese, or any kind of shredded cheese
1 slice of deli ham, or cooked crumbled bacon
Beat eggs with a splash of half and half. Scramble with a bit of butter in a skillet over medium heat to a soft, wet consistency. Remove, add a bit of additional butter on top of egg, and set aside; wipe out pan.
Add more butter to the skillet and melt over medium heat. Once melted, add the first flour tortilla. Tear one slice of the American cheese or shredded cheese and scatter on top of the tortilla. Add the slice of ham, or crumbled bacon, the scrambled eggs, tear the second slice of cheese.
and scatter that on top of the eggs, and top with the second tortilla.
Turn the heat up to medium high and cook until the bottom tortilla is golden brown and crisp. Using a wide spatula or egg turner, carefully turn the tortilla over and cook on the other side until golden brown.
Remove to a cutting board and let rest for just a minute. Slice in half and then in quarters. Serve with a side of chunky salsa and unsweetened Greek yogurt and some fruit.
