  • INGREDIENTS

    250g (1 cup) frozen balckberries
    460g (3½ cups) plain/ all-purpose flour
    250g (1 cup) caster/ granulated sugar
    1 Tablespoon baking powder
    2 teaspoons baking soda
    1½ teaspoons salt
    zest of one lime
    50g (1/4) coconut
    250g (1 cup) cold unsalted butter, cubed
    2 Tablespoons vanilla extract
    250g (3/4 to 1 cup) well-shaken cultured buttermilk
    2 to 4 Tablespoons demerara sugar
    Melted white chocolate to drizzle. (optional)

  • INSTRUCTIONS

    Pre-heat oven to 190c (375F)

    Sift the flour, baking powder and baking soda. Whisk in the salt and sugar, lime zest and coconut.

    Using a pastry cutter or your finger tips. Cut the butter into the dry ingredients. If using your finger tips, rub the butter into the dry ingredients. The butter should be pea sized. Add the blackberries and toss gently.

    Make a well in the centre and add the buttermilk slowly. The dough should start to just come together and form a soft ragged dough. Add a touch more buttermilk so that the dough becomes slightly wet.

  • Roll on a well floured surface. Cut the teacakes out with a round cutter.

    Place on baking tray lined with greaseproof. bake at 190c (375F) for about 20 minutes.

    Leave lots of room between each teacake. They will spread!

    Remove to a cooling rack and drizzle with the melted chocolate.
