Bell Pepper Chicken

    3-4 deboned chicken breasts
    2 or more bell peppers (any color)
    1/4 cup chili powder
    1/2 cup chopped onions
    3 table spoons olive oil

  • Slice bell peppers, and cut up onions
    Place them in a pan on the stove, and pour the olive oil over them.

  • Cut up chicken to preferred size (I normally slice them width wise, but you could cube them). Put chicken in pan with bell peppers and olive oil.

  • Sprinkle chili powder over chicken, peppers, and onions. Mix all together. Cook on medium heat till chicken is opaque. In order to get the most flavor, keep a lip on the pan whenever you're not stirring the mixture.

  • You may serve over rice, or other cooked veggies. I just eat it by itself, but I've had it over rice and it's just as good :)
