Bacon and Spinach Pasta with Parmesan
Food & Drink
This recipe is too die for. Not only is it easy and delicious, it's relatively cheap to make. I got this recipe from http://www.budgetbytes.com/2014/10/bacon-spinach-pasta-parmesan/comment-page-2/#comment-323311
6 oz. bacon (1/2 12oz. pkg)
1 small onion
2 cups chicken broth
½ lb. pasta
¼ lb. (3-4 cups) fresh spinach
⅓ cup grated Parmesan
Sauté the bacon in a large skillet until it is brown and crispy.
While the bacon cooks, dice the onion. Add the onions and sauté until they are soft and. Allow the moisture from the onions to dissolve some of the browned bits off of the bottom of the skillet.
Add two cups of chicken broth to the skillet. Add the pasta to the skillet, place a lid on top, and let the skillet come to a boil over high heat. Once it reaches a boil, turn the heat down to low and let simmer for 15 minutes. Add the spinach, let it wilt. Add parmesan and serve.
Please note: I did not have any spinach so I used a green bell pepper and some green peas. It was delicious. I also added crushed red pepper and crushed black pepper. Again this is not my recipe, I found it at http://www.budgetbytes.com/2014/10/bacon-spinach-pasta-parmesan/comment-page-2/#comment-323311
