Awesome Gluten-free Chicken Parmesan

Two boneless, skinless chicken breasts; cut in half through the middle
Bob's Red Mill gluten-free flour
Your choice of sauce (Classico is gluten-free.)
1/4 cup corn meal
1/4 cup grated Parmesan
1 tbsp. sugar
Your choice of gluten-free pasta (I prefer rice pasta)
Mix corn meal, Parmesan and sugar on a plate. Dip chicken in flour, then eggs, then corn meal mixture. Place in large skillet on medium heat for about five minutes on each side. When flipping to the second side, put sauce and mozzarella on top and cover. Don't forget to cook the pasta, too! ; )
Sometimes I'll add Italian seasoning to the corn meal mixture. A good rice pasta is DeBole's. Add a teaspoon of olive oil to boiling water before adding pasta.
