Apple Cupcakes

  • So I got this recipe from popsugar and made it for Thanksgiving and it was SOOOOO GOOD that I have to share it with y'all!!!

  • Ingredients:

    For the cupcakes:
    2 1/4 cups all-purpose flour
    3 teaspoons baking powder
    1/2 teaspoon baking soda
    1/2 teaspoon salt
    3/4 teaspoon cinnamon
    1/2 teaspoon ground nutmeg
    1/4 teaspoon ground ginger
    1/2 cup butter, at room temperature
    1 cup granulated sugar
    2 large eggs
    1 teaspoon vanilla extract
    1 cup apple butter
    3/4 cup milk

  • For frosting:

    1 cup butter, at room temperature
    5 cups powdered sugar
    1/2 cup apple butter
    1 tablespoon vanilla

    **tip: I would recommend cutting this frosting recipe in half because it makes way more than you need!!**

  • Decorations:

    To make the cupcakes look like apples, you'll need red sanding sugar, watermelon air heads (could also use green apple; just needs to be green), mini pretzel sticks (don't need many because you'll be cutting them in half), and lastly pop rocks!! The pop rocks can be any flavor of your choosing!


    Wash hands

    Preheat oven to 350 degrees Fahrenheit.

    Line the muffin pan with cupcake papers.

    **this recipe makes about 20 cupcakes, give or take **

  • In a bowl, combine the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger. Then set aside to use later.

    **mix gently as to not get the flour going everywhere **

  • You will need an electric mixer for this next part. It may be hard to do by hand. Beat the butter with the sugar. Then add in the eggs and vanilla. Lastly, beat in the apple butter. For each part of this step, mix together the ingredients until the mixture is at a creamy texture, before adding the next ingredients.

  • Slowly, alternate adding the flour mixture and milk to the liquid mixture until everything is mixed together. It is important to alternate so that the cupcake batter doesn't go everywhere and the flour and milk are equally distributed.

  • When the ingredients are all mixed together, pour the batter into the cupcake liners, about 2/3 of the way full to get a nice dome-like shape. Bake for about 18-20 minutes or until toothpick inserted comes out clean. When they are done baking, make sure they cool COMPLETELY.

    **I rushed into adding the frosting and candies before my cupcakes were cooled and the pop rocks lost their surprise fizz and tasted soggy. SO LET THEM COOL AND BE PATIENT!! They are very moist cupcakes and need to be cooled.**

  • While the cupcakes are being baked, it's time to make the frosting. Use an electric mixer to beat together the butter and sugar until creamy. Then, slowly add the apple butter and vanilla and continue to beat the frosting until it's at a creamy texture.

  • When you finish the frosting, place the air heads on a cutting board and cut them into diamond shapes. These are going to be the leaves of the apple. You could also buy a small leaf shaped cookie cutter if that's easier but the free hand cutting worked for me. You will need two per apple.

  • When the cupcakes are all COOLED, then it's time for my favorite part!! Get a jumbo sized straw and poke it through the center of a cupcake, giving it a little twist. Then fill the hole you made about half way with pop rocks and place the piece of cupcake from the straw back into the hole, making it look like it was never opened in the first place. You could also use a core but the straw works really well!! The pop rocks are a fun little surprise that no one will see coming until they feel that fizz!!

  • After you fill all the cupcakes with pop rocks, you would want to cover all the cupcakes in frosting, leaving no signs of the cake. Then, you want to dip the cupcake in red sanding sugar to give the apple it's redness.

  • Last step, I promise!! After each cupcake is frosted and sanded, you want to cut the pretzel sticks in half and place one into each center of a cupcake. This represents the stem of the apple. Then, place a "leaf" (the airhead pieces that you cut) on each side of the stem so that there is two leaves per cupcake. Then you are all done!!
