A Healthier Option To Mozzarella Sticksingredients
1 head cauliflower (7-8 in wide)
1/4 c egg whites
1/2 c + 3/4 c (for topping) mozzarella tex mex cheese shredded
1 tsp italian herb seasoning or dried herbs (rosemary, basil, parsley)
1/4 tsp freshly ground pepper
pinch of salt
marinara sauce for dipping Directions
Preheat oven to 375 degrees
Rinse cauliflower
Remove outer leaves
Separate into florets with pairing knife
Put florets into food processor and process till "rice" texture
(some coarse chunks are fine)
Place in a oven proof baking dish bake 20 min
removed cooked cauliflower transfer to bowl lined with linen towel. let cauliflower cool (15 min) fold towel holding by ends and squeeze liquid out of cauliflower "ball" as hard as you can. Be patient and do this a few times until barely any liquid comes out. increase oven temp to 450 degrees
Transfer cauliflower to mixing bowl along with egg whites, 1/2 cup cheese, herb seasoning, black pepper, pinch of salt to combine transfer cauliflower mixture onto the baking sheet lined with parchment paper. Flatten with your hands into rectangle, approximately 9" x 7" size and 1/4 in thick bake for 18 min remove from oven and top with remaining 3/4 cup of cheese then broil till cheese golden brown cut 1q2 bread sticks and serve hot with warm marinara sauce ( if you want a lighter version of the dish do not top with cheese)
