  • Apple Crumble Muffins
    Apple Crumble Muffins
  • 13 Ingredients 

    • cooking spray 
    • 2 cups oat flour 
    • 1 tbsp baking powder 
    • 1/4 tsp salt
    • 1 cup shredded apple
    • 1/2 cup honey 
    • 1 egg, beaten 
    • 3/4 cup almond milk
    • 3 tbsp coconut oil, melted 
    • 1/4 cup coconut oil, softened or melted (for topping)
    • 1 tsp cinnamon ( topping)
    • 1/3 cup packed brown sugar (topping)
    • 1/2 cup oat flour (topping)

  • Directions 

    1. Preheat oven to 375 degrees. Coat muffin pans with cooking spray.

    2. In a large bowl, combine oat flour, baking powder, and salt. Make a well in the center, and add Apple, honey, egg, almond milk, and 3 tbsp melted coconut oil. Mix gently.

    3. To make topping, mix all ingredients and mix into a crumble.

    4. Divide batter into 12 muffin tin sand sprinkle with crumble topping. Bake for 30 to 40 minutes until an inserted toothpick comes out clean.

  • 8 Ingredients 

    • 1/2 cup flour
    • 1/8 tsp baking soda
    • 1/8 tsp baking powder
    • 1/3 cup packed brown sugar 
    • 3 cups dried fruit (any thing you like)
    • 1 1/2 cup dry roasted nuts, chopped (any you like)
    • 1 egg
    • 1 tsp vanilla

  • Directions 

    1. Preheat oven to 325 degrees. Line an 8 by 8 inch baking pan with parchment paper, or coat with nonstick spray.

    2. Whisk flour, baking soda, and baking powder together in a large bowl until evenly combined. Add sugar, fruit, nd nuts. Mix to coat all fruit and nuts with the flour mixture. 

    3. In a separate bowl, beat egg with vanilla until frothy and thick, about 2 minutes. Stir egg mixture into the flour mixture until evenly mixed. Spread mixture into prepared pan, using a spatula to smooth out the top. 

    4. Bake for 35 to 45 minutes, or until golden brown.

  • Baked Banana Bread Doughnuts

  • 11 Ingredients 

    • Cooking Spray 
    • 1 cup whole wheat flour
    • 1/2 tsp baking soda 
    • 1/4 tsp salt 
    • 2 tbsp coconut oil 
    • 2 ripe bananas 
    • 1/4 cup agave syrup ( or maple syrup)
    • 1/4 cup Greek yogurt 
    • 1 egg, lightly beaten 
    • tsp vanilla 
    • 1/2 cup walnuts, chopped 

  • Directions 

    1. Preheat oven to 325 degrees. Lightly coat a doughnut pan with cooking spray and set aside. ( if you don't have a doughnut pan, you make these into muffins or use a bunbt pan for one giant doughnut)

    2. In a large bowl, whisk together flour, baking soda and salt. Set aside.

    3. In a medium bowl, combine coconut oil, bananas, agave syrup, yogurt, vanilla, and egg, and whisk until smooth.

    4. Add wet mixture to dry mixture, and stir until just combined.

  • 5. Pour after into resealable bag, cut off one corner. Squeeze batter into prepared doughnut pan, making sure each indentation is about 3/4 full. Top with walnut pieces, and lightly press them into the batter.

    6. Bake for 14 to 16 minutes or until doughnuts are golden and spring back when touched. Remove from oven and cool in pan for a few minutes. Then carefully turn out onto a wire rack and cool fully.

  • Banana Cream Cheese Stuffed French Toast 
    Banana Cream Cheese Stuffed French Toast 
  • 10 Ingredients 

    • 2 slices whole wheat bread 
    • 1/2 a banana 
    • 1 to 2 tbsp low fat cream cheese 
    • 1/2 tbsp honey
    • cinnamon (optional: nutmeg)
    • 1 large egg
    • 2 tbsp milk
    • tsp vanilla 
    • cooking spray 
    • 1 tbsp toasted almonds, chopped (optional)

  • Directions 

    1. Spread 1/2 to 1 tbsp of cream cheese on each slice of bread.

    2. Slice bananas lengthwise, into 4-5 thin strips and layer banana over the cream cheese. 

    3. On the other slice of bread sprinkle pasted almonds, cinnamon, and honey. 

    4. Place one piece of of bread over the other making a sandwich. 

    5. Whisk egg, milk, and vanilla in a shallow dish.

    6. Place sandwhich in egg mixture, flipping over to make sure each side is coated in egg.

    7. Sauté on low to medium heat in a nonstick panoates with cooking spray until golden brown.

  • Pumpkin Pie Oatmeal 
    Pumpkin Pie Oatmeal 
  • 9 Ingredients 

    • 1/3 cup rolled oats
    • 1 cup milk 
    • 1/3 cup pumpkin purée
    • 1 tbsp pumpkin pie spice 
    • 1/2 tsp vanilla 
    • pinch sea salt
    • 1 tbsp chopped pecans (optional)
    • 1 tbsp maple syrup (optional)
    • pinch of cinnamon (optional)

  • Directions 

    1. In a pot over medium heat, cook oats and milk until boiling.

    2. Turn heat to medium-low and add pumpkin. Stir for 5 to 7 minutes. 

    3. Add spices and vanilla, and stir frequently for another 5 to 7 minutes. 

    4. Pour into bowl and add toppings as desired.
