  • Vegan nutritive couscous salad 
    Vegan nutritive couscous salad 
  • Ingredients: 

    • For the couscous : 
    - 1/2 cup of dry original couscous (any kind, I used Zelda) 
    - 1 cup of water 
    - Tomatoes (I like cherry tomatoes best) 
    - Broccoli 
    - Argula 
    - Carrots 
    - Dry cranberries 
    - Dry peppers 
    - Olives  
    - chick peas or any kind of beans 
    - Any kind of nuts (optionnal) 

    • For the dressing : 
    - Olive oil 
    - Salt and pepper 
    - Fresh lemon or lemon juice 
    - Basil 

  • 1- Pour the water and the couscous in a medium sized cooking pot. 

2- Put the pot on the stove. 

3- Set the temperature to 6-7 

4- Let it cook following the directions on your couscous box/bag (varies for every brand). Add olives, dry cranberries and peppers.

5- When cooked, turn off the stove.

    5- When cooked, turn off the stove. 

  • 6- Transfer the couscous in a bowl 

7- Let it cool down for 30 mins or until room temperature 

8- Cut the other veggies as you wish

  • 7- In a small bowl, combine 3 tablespoons of olive oil, salt and pepper. 

8- Cut your lemon in half and press it to get the juice out

  • 9- When the couscous is cooled down, add the veggies, the aragula, nuts (if you want). 

10- Put the dressing on top and add salt, pepper, lemon juice and basil.
