" Eggs Over Sweet Potato Hash " Healthy-Healthy!!

  • Ingredients:
    * 1 Small Sweet Potato (or 1/2 medium) shredded
    * 1/4 Cup Red Bell Pepper (cut small)
    * 2 Eggs (you can remove one yolk if on a strict diet)
    * Salt and Pepper
    * 1 TB Olive oil (or use the spray version)
    * Garlic Powder Green onions (for garnishing)

  • Directions:

    1. Place shredded sweet potato and red pepper with olive oil in a pan.

    2. Sprinkle some salt and garlic powder. let it fry/simmer for a couple of minutes and cover it for another minute or two so the potato cooks on medium-low heat.

  • 3. Add eggs and cover again for another minute (covering after adding the eggs will help cook the eggs faster and better).

    4. Sprinkle salt and pepper.

    5. Garnish with onions.

    I like my hash super well done and crispy!
