    🍊 YOU'LL NEED 🍊

    β€’ 2 tablespoons of olive oil
    β€’ 80grams of butter
    β€’ 4 garlic cloves, thinly sliced length ways
    β€’ 2 long, fresh chillies, finely chopped
    β€’ 1KG peeled green prawns, with tails intact
    β€’ 2 tablespoons of lemon juice
    β€’ 3 teaspoons of lemon rind
    β€’ 1/4 cup of chopped coriander
    β€’ rocket leaves to serve
    β€’ crunchy / slightly toasted bread brushed with olive oil and char grilled.

  • 🍏🍎 METHOD 🍎🍏

    πŸ‘ STEP 1 πŸ‘

    β€’ heat the oil and butter in a large frying pan over a med-high heat.

    β€’ add the garlic and chilli and cook, stirring for 1 minute or until aromatic

    β€’ add the prawns and season with salt and pepper

    β€’ cook, stirring for 3-4 mins or until the prawns are just cooked through.

    β€’ add the lemon juice, lemon rind and coriander to the prawn mixture and toss to combine.

    β€’ divide the prawns among serving plates and serve with rocket and bread πŸ‘Œ

    πŸ„ YOU'LL NEED πŸ„

    β€’ 2 slices of whole grain bread
    β€’ 2 teaspoons of butter
    β€’ 2 slices on any cheese - I prefer Swiss.
    β€’ 2 slices of thin slices deli ham
    β€’ 1 teaspoon of Mayo
    β€’ 1 teaspoon of Mustard

  • 🍞🌽 METHOD 🌽🍞

    β€’ Preheat a skillet over med - high heat

    β€’ spread one side of each slice with butter, place one side, butter side down in the hot skillet

    β€’ top with Swiss cheese and ham

    β€’ spread the un buttered side of the second slice with Mayo and Mustard ; place it butter side up on top to finish the sandwich.

    β€’ cook until golden brown or until cheese is melted - usually 3 mins each side is spot on.

    β€’ 1 pint of cherry or grape tomatoes

    β€’ 1/3 of a cup of pitted Kalamata olives

    β€’ 4 ounces/1cup of feta cheese, coarsely crumbled

    β€’ 1/2 a cup of fresh mint leaves

    β€’ 2-3 tablespoons of olive oil

    β€’ sea salt or coarse salt and ground pepper

    β€’ 1 1/2 pounds thin chicken cutlets : about 8.

  • 🍍 METHOD🍍

    β€’ in a med bowl, combine tomatoes, olives, feta and 1 tablespoon of oil. Season with salt and pepper then set aside

    β€’ heat a grill pan over high and brush lightly with oil.

    β€’ season cutlets with salt and pepper, and cook working in batches as necessary, until the chicken is cooked through, 1-2mins each side usually

    β€’ transfer to a plate and cover in foil to keep warm, top chicken with tomato mixture and serve 😺😸
